As most BBQ teams know, your rig is always a work in progress. We first built our trailer in 2006, using a 7'x16' flatbed trailer. We replaced the floor with diamond plate, gave it a purple paint job, bolted down a couple of smokers and we were set. At first we set up a tent to cover the trailer, but that soon became too much work at each contest to set up and tear down. In 2007, the first overhaul took place, we added a tube steel roof frame, a custom canvas roof and a small stainless steel table. For 2008, we removed the large offset smoker that was taking up too much room, added a second GoodOne 30x24 and a larger stainless table that rotates into place. This past off season the trailer got another overhaul. This time, a 60" 2 door under-counter commercial refrigerator was installed and our storage box moved from the front to the side of the trailer. The final addition (for now) was installed at our first contest, a swing arm that holds a 22" Weber grill, made by our friend Dick Dunker of Dodge County Smokers, was mounted to the rear roof pole.
